The tavern uses one meeple that's put back into the "bag" and gives two new workers from the "bag". I must have been able to use the blue meeple that was overbid on an other tile to activate the tavern. Now the game just took one of my two red workers that I had behind my screen.

In my hardcopy of the rules, chapter "Bidding", item 5, states that outbid workers can be used for a bag exchange (imgur.com/8rWA3AF). This explanation is not in the online PDF version of the rules but otherwise the wording is the same. This rule should be respected and implemented.

It's Blue by another Bid, I'd like to use the Blue behind my screen to activate and pay for the Green worker with my outbid yellow worker on the Alehouse.
when I activate the Peddler, I either just select the 1 blue worker and it says "You cannot afford the activation cost of this tile" or I select the "... plus take back my outbid workers : " and move the yellow worker up as an option before selecting the single blue worker to use to activate. When I do this, I get "Worker colours for a tile need to match (you must use only blue workers here)"
I've tried in Chrome mobile (Galaxy S7) and Chrome (Windows 10). Both with all updates.

I was unable to use my overbid blue workers to pay the activation cost, this was unable to use the tile at all

The outbid blue meeple on Watermill were use on the village tile Keywood for production
