I can hide the messages, but I worry about players misunderstanding when the log just says "score 1 point, undo, scored 1 point" etc
Otherwise, like it's the case at the moment, it's pretty confusing!! We're getting plenty of actions in the log, some cancelled, some not, and it's difficult to figure out which ones are the actual final actions. Thanks!
So if for example a player places a tile scoring a point, then hits undo, and instead places a leader. We have 5 log messages.

I can have certain actions not show messages when they are sent, so if for example we didn't show the undo messages, then the log would read.

Which is pretty obviously wrong.
I think the best alternative might be to add an end of turn summary box for each players turn. Formatted something like this.
Urn Turn 4:
Action 1 - Placed red tile at D6
Action 2 - Moved black leader to A3, losing a revolt
Total Points - 1 red, 1 green, 1 blue

It would take a little work to properly record all of that and format it nicely, but then I could also add a player option to simplify the log, where all other log messages are hidden by default, and you can click [ See Details ] to show the log messages for that turn.

Are you certain of this? In TTA for instance (boardgamearena.com/gamepanel?game=throughtheagesnewstory ), we can see the entire log, including cancelled moves during a player's turn, and when that player completes and confirms the end of his turn, only the final moves remain shown in the log. The cancelled moves are not showed in the log anymore.
